Born on Rue du Vertbois in Paris’s 3rd arrondissement, Guefen first emerged as a discreet yet daring destination — a place where curiosity met precision, and where every plate told a story.
From the very beginning, our vision has remained constant: to create a cuisine that speaks to both the senses and the spirit.
Now located on Rue de Charenton, in the 12th arrondissement, Guefen continues its journey with the same soul and ambition — to bring meaning back to the act of dining.
Refined Kosher Cuisine, Rooted in Integrity
Since October 2023, Guefen has chosen to craft a menu made exclusively from 100% kosher halav Israel products.
What began as a path guided by conviction and rigor soon became a true quest: two years of intensive work, meticulous research, tastings, and encounters with the most demanding suppliers — always with one goal in mind: reaching a level of haute gastronomie that reflects our ambitions.
Today, this commitment has reached its fulfillment.
We are proud to have obtained the TopK certification (Rav Wolff), kosher lemehadrin halav Israel.
This recognition does not change our philosophy — it affirms it. It seals a deep commitment: to offer a cuisine that is precise, elegant, and coherent, where every product, every cooking method, every pairing is conceived with respect and inspiration.

A New Chapter with Chef Yonatan Mary
In September 2025, Guefen opens a new chapter with Chef Yonatan Mary.
Trained in renowned kitchens, he brings creative energy and sensitivity to the art of modern kosher cuisine.
“Cooking kosher isn’t a constraint,” he says.
“It’s a new language — one that invites creativity, honesty, and emotion.”
Under his direction, the menu will explore a dialogue of flavors — from the Levant to the Mediterranean — always with the instinct, refinement, and freedom that define Guefen.
