That day, an unprecedented attack struck Israel.
Civilians were targeted in several localities, and hundreds of people lost their lives or were taken hostage.
The event deeply affected families, communities, and far beyond, across the world.
Like many, we were shaken.
And in that upheaval, a reflection emerged: the need for alignment between what we do, who we are, and what we believe in.

In the aftermath of these events, we decided to guide Guefen toward a fully kosher cuisine.
Not as a political gesture, but as a way to affirm a personal and professional coherence.
A way to bring meaning to our work at a time when everything felt uncertain.
In October 2023, we began working exclusively with 100% kosher products.
It was the first step on a demanding path.
A transformation built over time
For two years, we searched for the finest products, met with suppliers, refined our recipes and our methods.
We wanted to ensure that this transition respected both the rules of kashrut and our gastronomic ambition.
This patient, rigorous, and sometimes complex work shaped a new culinary identity, faithful to the spirit of Guefen.
The culmination of a commitment
Today, we are proud to have obtained the TopK certification (Rav Wolff), kasher lemehadrin halav Israel.
This recognition does not change our cuisine: it confirms the path we chose.
